GINGER AND GARLIC SHRIMP WITH ANGEL HAIR PASTA

2 tbsp olive oil
1 tbsp fresh ginger, sliced
2 garlic cloves, thinly sliced
1/2 lb (26-30 count or larger) shrimp, peeled and deveined
2 roma tomatoes, chopped
1 tbsp fresh parsley and basil, chopped
1/4 cup chicken stock
2 tbsp butter
1 lb angel hair pasta, cooked according to package directions
While pasta is cooking, heat olive oil in a saute pan over medium high heat for 15 seconds. Add ginger and garlic; cook for 1 minute. Add shrimp; cook for 1-2 minutes. Turn shrimp; add tomatoes and 1/2 of parsley and basil; Cook for 1 minute. Add stock; cook until reduced by 1/2. Add butter; cook until melted. Add remaining of parsley and basil and cooked hot pasta. Mix well and serve. Serves 4
