GREEK PASTA WITH SHRIMP AND FETA CHEESE

3 tbsp vegetable oil
2 1/2 cups chopped onion
1/4 cup chopped fresh parsley
1 clove garlic, minced
1 tsp sugar
2 cups plum tomatoes, chopped
1 cup dry white wine
1 1/2 lbs medium shrimp, peeled
1 cup feta cheese, crumbled
8 oz angel hair pasta, cooked
Preheat oven to 425. Heat oil in a skillet and add onions; saute until light golden brown, about 7 minutes. Add next 3 ingredients and stir to mix. Add tomatoes and cook until softened and liquid is absorbed, about 20 minutes. Add wine and cool until liquid is almost absorbed. Add shrimp and cook, stirring constantly for 30 seconds. Remove from heat. Put the cooked pasta into a lightly greased 2 quart casserole and pour the sauce and shrimp over it. Top with feta cheese. Bake until the cheese melts, about 5-8 minutes. Serves 4
