GRECIAN GROUPER

4 (6 oz) grouper fillets
1 tsp Greek seasoning
2 tbsp butter
1 pkg frozen chopped spinach, thawed and squeezed dry
1 plum tomato, coarsely chopped
1/4 cup crumbled basil- and tomato-flavored feta cheese
Sprinkle both sides of fillets with seasoning. Melt butter in a large skillet over medium heat. Add fish, and cook 3 minutes; remove skillet from heat. Turn fish; top with spinach, tomato and cheese. Return skillet to heat; cover and cook 3 minutes or until spinach is hot and fish flakes with a fork. Serves 4
