MEXICAN PORK CHOPS

6-8 (1 inch thick) pork chops
Bacon drippings
1 to 1 1/2 cups rice
2 cups water
1 (8 oz) tomato sauce
2 tbsp taco seasoning mix
1 cup shredded cheddar cheese
1 green pepper, cut into rings
Salt and paprika, to taste
Season pork with salt and paprika. Brown in bacon drippings in skillet. Place in a 13x9 inch baking pan. Sprinkle rice around chops. Pour mixture of tomato sauce, seasoning mix and water over all. Bake, tightly covered, for 1 hour and 20 minutes. Top with cheese and green pepper rings. Bake an additional 10 minutes.
