ROASTED ONION RANCH DIP

1/2 cup chopped white onions
1 tbsp olive oil
2 cups sour cream
1 cup mayonnaise
1/2 cup buttermilk
1 pkg dry ranch salad dressing
1/4 cup minced red bell pepper and Italian parsley
1 tbsp lemon juice
Preheat oven to 375. Put the onions and oil in a small baking dish and toss to coat. Bake about 25 minutes, stirring occasionally, until the onions are golden and aromatic. Remove from the oven and let cool.
Whisk together all remaining ingredients in a bowl. Stir in cooled onions. Serve right away or cover with plastic wrap and refrigerate up to 3 days. Serve with crackers, vegetables, onions, sandwiches, and hamburgers.
