ITALIAN STYLE FLOURNDER

2 lbs flounder fillets
1/2 tbsp butter
Salt and pepper, to taste
1 tbsp lemon juice
1/2 cup diced fresh tomato
2 tsp dried basil
1 tsp garlic powder

Preheat oven to 350. Arrange flounder in a medium baking dish. Dot with butter, season with salt and pepper, and sprinkle with lemon juice. Top with remaining ingredients. Cover, and bake 30 minutes for until fish is easily flaked with a fork. Serves 4

NOTE: I like to serve with Pasta Mezzanotte.
