DIABLO CHICKEN

2 oz chicken breast, boned
1/2 pint dry white wine
2 shallots, chopped
1 tsp mustard
1 chicken bouillon cube
Pinch cayenne pepper
Salt and pepper, to taste
Preheat grill to medium-high heat. Season chicken with salt and pepper.
Rinse and dry chicken well. To make sauce; in a saucepan, simmer wine with the chopped shallot until reduced by half. Remove from the heat. Dissolve the bouillon cube in the wine. Add the cayenne pepper and the mustard. Use the sauce to brush the meat as it cooks for 6-10 minutes on each side or until juices run clear.
