BEEF AND NOODLES ITALIANA

1 clove garlic, minced
1 medium onion, finely chopped
2 tbsp olive or salad oil
2 lbs ground beef
1 (8 oz) can mushrooms and tomato sauce
1 can tomato paste
2 tsp salt
1 tsp oregano and pepper
2 eggs
1 (8 oz) pkg wide noodles, cook and drained
1 (10 oz) pkg chopped spinach, thawed and drained
1 cup parmesan cheese and small curd cottage cheese
1 pkg processed American cheese, sliced

Preheat oven to 350. Brown garlic and onion in 1 tbsp oil; add beef and cook until browned, stirring occasionally. Add mushroom and liquid, tomato sauce and paste, 1 tsp salt, oregano and pepper; simmer for 15 minutes. Beat 1 egg slightly; pour over cooked noodles, mixing well, beat remaining egg; add spinach, remaining 1 tbsp oil, 1 tsp salt, parmesan cheese and cottage cheese. Mix well. Pour half of meat mixture into a shallow baking dish. Place half the noodles and top with remaining meat mixture. Cover with foil and bake for 45 minutes. Remove foil and arrange cheese strips on top. Bake 5 minutes longer. Serves 8
