GLAZED WINTER VEGETABLES

4 medium onions, peeled and sliced
4 large carrots, peeled and sliced in half into long strips
1 large parsnip, peeled and sliced in half into long strips
3/4 cup water

Glaze 1/4 cup butter
1/2 cup brown sugar and orange juice

In an oiled baking pan, add vegetables. Pour water over vegetables. Cover pan with foil and bake at 325 for 1 1/2 to 2 hours or until vegetables are tender. Remove lid and let vegetables brown for 15 minutes.

Melt butter for glaze in a saucepan. Add sugar and mix well. Add orange juice and cook over medium heat stirring occasionally for 30 minutes. Remove from heat. Sauce will thicken as it cools.

To serve, place vegetables on plate, drizzle with glaze. Serves 6-8
