7 whole large leeks, white and pale green parts only
6 tbsp unsalted butter
2 small onions, finely chopped
7 large clove garlic, minced
3/4 cup dry white wine
1/2 tsp ground nutmeg
2 loaves French bread, cut into 1/4 inch slices
Olive oil
3 cups gruyere cheese, grated
Cut leeks lengthwise in half, the cut crosswise into very thin slices. Melt butter in a heavy skillet over medium-low heat. Add onions and saute until soft, about 5 minutes. Add leeks and cook until very soft, stirring occasionally, about 15 minutes. Stir in garlic and saute 2 minutes. Add wine and cook until almost no liquid remains in skillet, stirring frequently, about 6 minutes. Mix in nutmeg. Season with salt and pepper.
Preheat oven to 425. Place bread slices on baking sheet. Brush lightly with oil. Bake until golden brown, about 6 minutes. Cool completely.
Preheat oven to 400. Arrange to toasts on baking sheets. Spread 1 scant tbsp onion mixture over each. Sprinkle with cheese. Bake until cheese bubbles, about 5 minutes. Cut into serving pieces and transfer to a platter and serve.
