EGGNOG COOKIES II

1 cup butter, softened
2 cups sugar
1 tsp baking soda
1 cup egg nog
1/2 tsp ground nutmeg and cinnamon
5 1/2 cups flour
Icing
3 cups confectioners sugar
1/4 cu softened butter
1/3 cup egg nog
In a mixing bowl, beat butter and sugar until fluffy. Add egg not, baking soda and spices; mix well. Gradually add flour; mix well. Divide dough in half; chill overnight in refrigerator or 2 hours in freeze. Preheat oven to 375.
On a floured surface, roll out half of dough to 1/8 inch thickness; cut with floured cookie sheets. Place 1 inch apart on an ungreased cookie sheet and bake 8-10 minutes or until lightly brown. Cool. Ice and decorate if desired.
Icing: In a mixing bowl, beat sugar and butter until well blended. Gradually beat in egg nog until icing is smooth.
Variation: For Rum Butter icing, substitute with 6 tbsp light or dark rum.
NOTE: These are good not iced but with nutmeg lightly sprinkled on cookies before baking.
