CHOCOLATE CREAM TORTE

Cookie Layer
2 cups flour
1/3 cup cocoa
1/2 tsp baking soda and Salt and pepper, to taste
1/2 cup shortening
2/3 cup sugar
1/3 cup packed brown sugar
1 egg
1/4 cup water
1 tsp vanilla extract

Filling
2 cups whipping cream
1/2 cup sugar
1/3 cup cocoa
1 tsp vanilla extract
2 tbsp instant coffee powder

Cookie layer: Preheat oven to 350. Sift dry ingredients; set aside. Cream shortening, sugars and egg together until light and fluffy. Add water, vanilla and dry ingredients. Mix well. Work with hands to a smooth dough. Divide dough into 4 equal portions. Press each portion into an 8 inch circle on greased baking sheets. Bake for 12-15 minutes. Cool.

Filling: Combine ingredients. Cover and chill 1/2 hour. Whip until stiff. Spread one-fourth of filling onto each cookie round. Stack cookies evenly on top of each other. Chill overnight to let cookie layers soften.
