BARBECUED POT ROAST

Category: Roasts/Tenderloin - Beef

4 to 5 lbs beef pot roast
2 tsp salt
1/4 tsp pepper
2 tbsp butter
1/2 cup Coca-Cola
8 oz tomato sauce
3 medium onions, sliced
2 cloves garlic, finely chopped
1 tbsp brown sugar
1/2 tsp dry mustard
1/4 cup vinegar, ketchup and lemon juice
1 tbsp Worcestershire sauce

Rub the pot roast with salt and pepper. In a large pot heat the butter and brown the meat on all sides. Add the Coca-Cola, tomato sauce, onions, and garlic. Cover and cook over low heat for 1 1/2 hours. Mix the remaining ingredients together and pour over the pot roast. Cook slowly for another 1 1/2 hours or until the meat is very tender.
