Marinade
1 cup olive oil
1/2 cup bourbon and red wine vinegar
3 tbsp honey
1 tbsp minced garlic and grated fresh ginger root
1/4 cup soy sauce
1/2 small onion, thinly sliced
2 tbsp chopped fresh sage

3 lbs pork, beef or veal tenderloin
Salt, pepper and paprika, to taste

Combine marinade ingredients and mix well. Place tenderloin in a non-metal pan and pour marinade over it. Marinate in the refrigerator overnight. Before cooking, pat the meat dry and sprinkle with salt, pepper and paprika. Grill or roast to desired degree of doneness. Allow to rest in foil before slices.
