TURKEY AND HAM CASSEROLE

5 tbsp butter
1 medium onion, chopped
1 1/2 cups celery, chopped
5 tbsp flour
1 tsp salt and pepper
1/4 tsp basil and/or oregano
3 tbsp sherry
2 1/2 cups milk
1 can cream of mushroom soup
2 cups diced cooked turkey and ham
2 tbsp chopped green or red bell pepper
Parsley flakes
1/2 cup shredded sharp cheddar cheese

Preheat oven to 375. Melt butter and saute chopped vegetables. Add flour and stir until smooth. Add milk and cook until thickened. Add soup and seasonings, blending well. Fold in remaining ingredients, except. Pour into a large casserole dish and sprinkle cheese on top. Bake until bubbly and cheese has melted.
