* CHOCOLATE ECLAIR CAKE *

3 small packages vanilla instant pudding
3 cups milk
1-1/2 cups frozen dessert topping
1 lb plain graham crackers
1/2 lb unsweetened chocolate, melted
2 tsp light corn syrup
1 tsp vanilla extract
3 tbsp unsalted butter, softened
3/4 cup powdered sugar
3 tbsp milk
Combine pudding mix and 3 cups milk. Fold in dessert topping and set aside. Arrange graham crackers in a single layer in the bottom of a 9x13 in. pan. Spread half of pudding mixture over top. Add another layer of crackers and pudding mixture, ending with a layer of crackers.
Combine melted chocolate and next 4 ingredients in a bowl. Stir in 3 Tbs. milk and mix thoroughly, adding more sugar to taste, if desired. Spread over crackers. Cover with plastic wrap and refrigerate several hours.
