STRAWBERRY RHUBARB SQUARES

1/2 cup butter, softened and packed brown sugar
1/2 tsp vanilla
1 cup flour
¾ cup quick cooking oats
1/3 cup chopped nuts
1/4 tsp baking soda and salt
1 cup sugar
1/3 cup flour
1 tbsp milk
2 eggs
2 cups sliced strawberries, about 1 pint
2 cups sliced rhubarb, about 4 stalks
Brown Sugar Whipped Topping
1 cup whipping cream
1/4 cup packed brown sugar
1/2 tsp vanilla
Heat to 375. Mix first 3 ingredients in a medium bowl. Stir in the next 5 ingredients until crumbly. Reserve 1 cup of mixture. Press remaining mixture in an ungreased square pan. Mix next 4 ingredients in a small bowl. Fold in fruits. Pour into pan and sprinkle with reserved crumb mixture. Bake 40-50 minutes or until topping is golden brown and filling is set. Cool slightly. Cut into squares and serve with topping. Cover and refrigerate remaining dessert and topping.
Brown Sugar Whipped Topping: Beat ingredients in a chilled bowl until stiff.
