2 potatoes, thinly sliced
1 onion, thinly sliced
2 tbsp unsalted butter
4 eggs, lightly beaten
1/2 cup light cream
1/2 cup grated gruyere cheese
3 tbsp Dijon mustard
Salt and pepper, to taste
1 lightly baked 9 inch pie shell, firm but not brown.

Preheat oven to 375. In a skillet, saute potatoes and onion in butter until cooked and lightly browned, about 18-20 minutes. Cool slightly. Mix egg and next 5 ingredients into potatoes mixture. Pour into preheated pie shell and bake 35-40 minutes or until knife inserted into center comes out clean. Cool slightly before cutting into wedges.
