CHEESY SHRIMP CANAPES II

Category: Bruschetta, Crostini and Canapes

10 slices white bread
2 tbsp butter
1/2 tsp thyme leaves
6 oz cooked shrimp, cleaned and chopped
1/2 cup shredded Swiss cheese
1/3 cup mayonnaise
1/2 cup fresh bread crumbs
1/4 tsp salt or to taste
Dill weed

Preheat oven to 400. Using a 2 inch round pastry cutter, cut 2 circles from each bread slice. (Reserve scraps for crumbs.) In a small saucepan, melt butter and add thyme. Brush bread circles with this mixture and place on a cookie sheet; bake 10 minutes or until golden.

Meanwhile, combine shrimp and next 4 ingredients. When circles cool, put a rounded tbsp of shrimp mixture on each and sprinkle with a pinch of dill and broil for about 3 minutes.
