PEANUT BUTTER CUPS

2 cups milk chocolate chips
2 tbsp shortening
2 dozen 1 inch paper candy cups
3/4 cup creamy peanut butter
3/4 cup confectioners sugar, sifted
1 tbsp butter, melted

For chocolate cups, combine over hot water, chocolate chips and shortening. Stir until chips are melted and mixture is smooth. Remove from heat but keep over hot water.

Coat inside of 24 paper candy cups using 1 tsp of chocolate mixture for each. Place cups in the palm of your hand and rotate gently, using back of a spoon to push the chocolate up the sides. Chill until firm, about 15-20 minutes.

For filling: Combine last 3 ingredients and mix until well blended. Using slightly rounded tspfuls, shape peanut butter filling into balls and place into each chilled cup; pressing lightly with fingers to flatten.

Spoon 1 tsp melted chocolate mixture on top of each cup and smooth over to seal. Chill until firm, about 45 minutes. Store in airtight container in the refrigerator.
