ZESTY SKILLET PORK CHOPS

1 tsp chili powder
1/2 tsp salt
1 1/4 lbs pork chops
2 cups diced tomatoes
1 cup chopped green bell pepper
3/4 cup thinly sliced celery
1/2 cup chopped onion
1 tsp dried thyme
1 tbsp hot pepper sauce

Rub chili powder and 1/4 tsp salt evenly over chops. Combine tomatoes and next 5 ingredients in a bowl. Lightly coat a skillet with cooking spray or olive oil over medium-high heat. Add chops; cook 1 minute and turn chops. Top with tomato mixture. Bring to a boil; reduce heat, cover and simmer for 25 minutes or until pork is tender and mixture thickens. Transfer pork to serving plates. Increase heat and bring tomato mixture to a boil. Cook 2 minutes or until most of the liquid has evaporated. Remove from heat and add remaining salt. Spoon sauce over pork and serve.
