LEMON BREAKFAST MUFFINS

Category: Muffins

1 cup flour
1 heaping tsp baking powder
1/2 cup sugar
1 tsp salt
1 cup raisins, optional
1/4 cup melted butter
1/2 cup fresh lemon juice
2 eggs, lightly beaten
Finely grated lemon rind of 1 lemon

Topping
1/4 cup melted butter
1/2 cup sugar
1 tbsp lemon juice

Preheat oven to 350. Combine dry ingredients and blend well. After butter has been melted, stir in juice, eggs and rind. Add the dry mix to the wet mix until just combined. Spoon into prepared muffin pans and bake for 15-20 minutes or until toothpick inserted in center comes out clean. Remove from pan while warm and dip in topping.

Topping: Combine melted butter and just, measure sugar into a separate bowl. Dip top of muffins into butter; then sugar.
