SPICY MEXICAN TORTA

1 lb hot sausage
1 cup onion, chopped
2 clove garlic, minced
1 (4 oz) can chopped green chilies
8-10 inch flour tortillas (or 16 (6 inch) corn tortillas)
1 cup shredded sharp cheddar cheese and pepper jack cheese
1 (15 oz) can refried beans
7 oz jar roasted pimento peppers, drained/dices
Salt and pepper, to taste
Saute first 3 ingredients until sausage is done; drain. Stir in chilies and set aside. Grease a deep-dish pie plate. Place 2 tortillas in pie plate. Spread the sausage mixture over the tortillas.
Sprinkle with cheeses. Place 2 tortillas over cheese. Spread with beans. Place 2 tortillas on beans and place roasted peppers on tortillas. Place 2 tortillas over peppers. Spread with remaining mixture. Sprinkle with remaining cheese over top. Cover and bake for 40 minutes; uncovered. Bake 10-15 minutes more uncovered. Cool 10 minutes before cutting into wedges.
