1 clove garlic, minced
1 medium onion, finely chopped
2 tbsp olive oil
2 lb ground beef
1 (8 oz) can mushrooms and tomato sauce
1 can tomato paste
2 tsp salt
1 tsp oregano
2 eggs
1 (8 oz) pkg wide noodles, cooked and drained
1 pkg frozen chopped spinach, thawed and drained
1 cup parmesan cheese
1 cup small curd cottage cheese
1 pkg processed American cheese, sliced

Brown garlic and onion lightly in 1 tbsp oil; add beef. Cook and stir until brown. Add mushrooms with liquid, tomato sauce and paste, 1 tsp salt and oregano; simmer for 15 minutes. Beat 1 egg slightly; pour over cooked noodle mixing well, beat remaining egg; add spinach, remaining 1 tbsp oil, 1 tsp salt, parmesan cheese and cottage cheese. Mix well.

Pour half of meat mixture into shallow baking dish. Place half the noodles and top with remaining meat mixture. Cover with foil. Bake at 350 for 45 minutes. Remove foil; arrange strips of cheese on top. Bake for 5 minutes longer. Serves 8
