LEMON CHIVE SAUCE
Category: Sauces - Miscellaneous
1 cup lemon juice
1 1/2 cups water
1/2 tbsp minced shallots
Salt, pepper and cayenne pepper, to taste
3 oz white wine
2 tbsp cornstarch
2 tbsp chives, snipped
Combine first 5 ingredients in a saucepan. Bring to a boil and simmer gently for 15 minutes. Mix wine and cornstarch together until smooth. Add to juice mixture and bring to a boil, simmer for a few minutes, stirring, adding a little more water, if needed, and adjusting seasoning. Add chives at the time of serving. NOTE: For Lemon Dill Sauce, substitute chives for the dill and the wine for vermouth. Good with seafood. To make in a cream sauce, reduce 1 pint heavy cream in half and strain the wine mixture, pressing to get all of it and drizzle into cream, whipping constantly. Adjust for seasonings.
