2-1/2 lbs small russet (baking) potatoes
2 tbsp olive oil
2 tsp rosemary, minced
1/2 tsp salt and pepper
1/2 cup grated Parmesan cheese

Preheat the oven to 400. Halve the potatoes lengthwise, then cut lengthwise into wedges. Place the potatoes in a large bowl. Add the olive oil and toss to coat (as messy as it may be, the most efficient way to do this is with your hands). Sprinkle evenly with the rosemary, salt and pepper, and toss to coat thoroughly. Sprinkle with the Parmesan and toss.

Arrange the potatoes in a single layer on 2 baking sheets and bake for 40 minutes, turning every 10 to 15 minutes, or until the potatoes are golden brown and crisp.
