CREOLE SAUCE FOR MEATLOAF

Saute 1/2 cup chopped onion, 1/2 cup chopped green bell pepper and 1/4 cup chopped celery in 2 tbsp butter until vegetables are soft. Add 2 minced cloves garlic near end of cooking time. Add 1 drained 16 oz can tomatoes and a pinch of thyme. Bring to boil, reduce heat and simmer 10 minutes, breaking up tomatoes as they cook. Season with salt, pepper and cayenne pepper to taste. Top meat loaf with sauce halfway through cooking.
