CHOCOLATE TRUFFLE SAUCE

3/4 cup whipping cream
2 tbsp unsalted butter, cut into 2 pieces
12 oz semi-sweet chocolate chips
1 tsp vanilla extract

Put cream in a saucepan and heat over medium-low heat until the cream is hot and butter is melted. The hot cream mixture will form tiny bubbles and measure about 175 on a food thermometer. Do not let the mixture boil. Remove the pan from the heat and add the chips and let them melt in the hot mixture about 30 seconds to soften. Add vanilla and stir the sauce until it is smooth and all the chocolate is melted. NOTE: Can be used as hot fudge sauce, fudge filling or glaze a pie or cover a cake. USED in Mud Pie.
