BRISKET FINISHING SAUCE

2 tbsp vegetable oil
1 medium onion, minced
4 medium garlic cloves, minced
1/4 cup worcestershire sauce and cider vinegar
3 tbsp coarse-grain mustard
1 tsp celery seed
1/4 cup brown sugar
1/2 tsp cracked black pepper and coarse kosher salt
1/ cup ketchup

Heat oil in a saucepan over medium heat; add onion and garlic; cook until softened, about 5 minutes. Stir in remaiing ingredients except ketchup and bring to a simmer. Reduce heat to low and add ketchup. Cook, stirring occasionaly, until thickened, about 10 minute.s Using food processor, process sauce until smooth. Serve warm.

NOTE: Use this sauce on sliced smoked brisket.
