CAROLINA RUB

1/4 cup sweet paprika
2 tbsp coarse kosher salt, sugar, dark brown sugar, cracked black pepper and granulated onion
1 tbsp granulated garlic, ground cumin, ground cayenne pepper and dry mustard

Combine the ingredients in a mixing bowl and stir well to incorporate. This seasoing blend will keep about 2 months if stored in an airtight container. Yields about 1 1/4 cups.

NOTE: This rub is used with the Carolina Mob for pulled pork sandwiches.
