APRICOT SQUARES

2 1/2 cups flour
1/2 tsp baking powder and salt
3/4 cup butter
1 1/2 cups packed brown sugar
1 (12 oz) jar apricot preserves
2 eggs
1 tsp vanilla extract
1 tbsp confectioners sugar
Preheat oven to 324. Grease a 13x9 inch baking pan. In a small bowl, combine 1/2 cup flour, baking soda and salt. Set aside. In a medium bowl, beat butter and 1/2 cup brown sugar until light and creamy. Gradually add remaining 2 cups flour, beating until it resembles coarse crumbs. Press into prepared pan. Spread preserves over butter mixture.
In another bowl, beat eggs and remaining 1 cup brown sugar until thick. Beat in vanilla extract. Gradually add flour mixture, beating on low just until combined. Spread over preserves. Bake 40 minutes, or until lightly browned. Place on a rack to cool completely. Dust with confectioners sugar before serving.
