APRICOT NUT BARS

2 tbsp unsalted butter
1 tsp slivered almonds, shelled pistachios and raw cashews, chopped
1 1/2 tsp golden raisins
1/4 cup plus 2 tbsp flour
2 tbsp sugar
3/4 cup milk, scalded and hot
1/2 cup apricot preserves

Melt butter in a skillet. Gently saute nuts and raisins until nuts are darkened slightly. Stir in flour and cook 3 minutes, stirring constantly, or until flour is lightly roasted. Stir in sugar. Gradually whisk in hot milk in a thin stream. Cook 1 minute. Transfer to an oiled shallow cake pan. Press evenly into pan. Spread preserves over top and cool.
