APRICOT BARS

1 1/2 cups sugar and softened butter
3 cups flour
3/4 tsp baking soda
1/2 tsp salt
3/4 cup chopped walnuts
1 cup coconut, shredded
1 (15 oz) jar apricot preserves (can be mixed with strawberry preserves)

Cream sugar and butter. Add dry ingredients, nuts and coconut. Put half of mixture into a jelly roll pan and press evenly into pan. Bake at 400 for 10 minutes. Spread preserves over the baked mixture. Top with the rest of crumb mixture and press evenly. Bake for 20-25 minutes more at 400. Cool 10 minutes and cut into bars.
