SPICY PUMPKIN PANCAKES

1 3/4 flour
2 tbsp baking powder and packed brown sugar
1 tsp salt
2 tsp cinnamon
1 tsp allspice
1 1/2 cups evaporated milk
1 cup solid pack canned pumpkin
2 large eggs, slightly beaten
1 1/2 tsp vanilla
1/4 cup bacon drippings or oil
Maple syrup, warmed

In large bowl, stir together dry ingredients. In a medium bowl, mix together next 5 ingredients. Mix wet ingredients into dry ingredients and stir until well combined. Heat griddle until it is hot enough to make drops of water scatter across surface. Spray with cooking spray. Pour batter by 1/3 cupfuls onto griddle and cook for 2 minutes on each side, or until golden and cooked through. Serve with warmed syrup.
