CARAMEL PRALINE PANCAKES

Caramel Whipped Cream
1 cup whipping cream
1/4 cup caramel ice cream topping

Pancakes
2 cups flour
1/4 cup packed brown sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 beaten eggs
2 2/3 cups buttermilk
2 tbsp cooking oil
1 cup chopped toasted pecans

Whipped cream: In a chilled mixing bowl, combine ingredients and beat until stiff peaks form. Cover and chill until needed, up to 1 hour. Makes 2 cups

Pancakes: In a mixing bowl, combined dry ingredients. In another bowl, combine eggs, buttermilk and oil. Add all at once to the flour mixture. Stir until blended, but still slightly lumpy. Stir in pecans. Heat in a lightly greased griddle. Pour 1/4 cup batter onto griddle and cook until golden, turning to second sides when pancakes bubbly surfaces and are slightly dry around the edges. Serve with whipped cream.
