Pancakes
1 1/2 cups flour
2 tbsp sugar
2 tsp baking powder
3/4 tsp salt
1 egg
1 1/3 cup milk
3 tbsp salad oil
Butter
1 banana, mashed
1/4 cup chopped walnuts

Blueberry sauce
1 cup blueberries
1/4 cup sugar
1 cup water
Lemon zest

In a large bowl, mix dry ingredients. In a small bowl, beat egg slightly; stir in milk, mash banana and oil; add to dry mixture and stir just until moistened. Stir in nuts Pour batter by 1/4 cupfuls onto lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with blueberry sauce

Blueberry sauce: In a saucepan, mash blueberries with sugar. Add water and lemon zest. Cover; simmer for 15 minutes. Strain, return to pan and simmer until slightly thickened.
