BAKED APPLE PANCAKES

3 cups apples, peeled, cored and chopped fine
1/4 cup lemon juice
Grated zest of 1 orange
1/4 cup butter
1/2 cup and 1 tbsp flour
1/2 tsp baking powder
1/4 tsp salt
6 eggs, separated
3/4 cup sugar
1/2 cup and 1 tbsp milk
1 tsp vanilla extract

Topping
1/4 cup sugar
1 tbsp cinnamon

Preheat oven to 375. Placed the apples in a bowl and add lemon juice and orange zest; toss and set aside. Prepare the topping by mixing the sugar and cinnamon together; set aside. Melt butter in a skillet, coating pan well. Remove from heat.

In a large bowl, sift together dry ingredients; set aside. In another bowl, beat egg yolks until thick; blend in the milk and vanilla extract. Add the yolk mixture to the dry mixture and beat until smooth. Fold in the egg whites and then the apple mixture. Pour the batter the prepared skillet and sprinkle with topping. Bake for 15 minutes or until set. Cut into 4 portions and serve immediately with butter and syrup.
