APPLES AND CREAM PANCAKES

1/2 cup milk
2 eggs
1/2 cup flour
1/4 tsp salt
1 to 2 tsp butter
1/4 cup packed brown sugar
1 pkg (3 oz) cream cheese, softened
1/2 cup sour cream
1/2 tsp vanilla
1 1/2 cup thinly sliced unpeeled apples
1/4 cup chopped walnuts

In a small mixing bowl, combine milk, eggs, flour, and salt. Beat till smooth. Heat a cast iron or oven proof skillet in a 450 oven until hot. Add butter to the skillet and spread over the entire bottom. Pour in batter. Bake for 10 minutes or till golden brown.

Meanwhile combine cream cheese and sugar. Blend in sour cream and vanilla. Fill pancake with 3/4 C. cream cheese mixture and top with apples. Spread remaining cream cheese mix over apples and sprinkle with nuts. Cut into wedges and serve immediately. Serves 4-6
