APPLE PECAN PANCAKES

2 cup flour
1 tsp baking powder
1/2 tsp salt
2 tbsp sugar
2 eggs
2 cups buttermilk
2 tbsp melted butter
1 tsp vanilla
1 1/2 cups finely chopped peeled apples
1/2 cup finely chopped pecans

In a bowl, combine dry ingredients. In another bowl, combine wet ingredients, minus apples and nuts. Add dry ingredients to we mixture and stir until smooth. Fold in apples and nuts. Allow mixture to stand 15 minutes.

Pour batter onto a lightly greased hot griddle 1/4 cup at a time and spread to form a 5 inch circle. Turn when bubbles form and continue cooking until golden brown and apples are tender. Sprinkle with confectioners sugar. Serves 8
