APPLE PANCAKES III

2 green apples, peeled, cored and thinly sliced
4 tbsp butter
1/2 cu milk
3 eggs
1/2 cup flour

Topping
1/4 lb butter
1/2 cup sugar mixed with 2 tbsp cinnamon
1/2 fresh lemon, optional

Preheat oven to 500. Saute apples in 4 tbsp butter until soft. Mix egg, milk and flour together. Pour egg mixture over apples and bake until it puffs up and brown around edge, about 10 minutes. Melt 1/4 lb butter and pour over baked pancake. Sprinkle with cinnamon sugar mixture while it is still in the oven watching closely so it does not burn. Squeeze with lemon and serve. Serves 2
