APPLE DUTCH BABIES

6 large eggs
1 2/3 cups milk
5 tbsp sugar, divided
1 tsp vanilla
1/2 tsp salt and grated lemon peel
1 2/3 cups flour
1 tbsp plus 4 tsp butter, divided
2 lb Golden Delicious or Granny Smith apples, peeled, cored and cut into 1-inch pieces

Heat oven to 425. Remove top even rack. Position other rack in lower third of oven. Combine eggs, milk, 2 tbsp sugar, vanilla, salt and lemon peel in large mixer bowl. Add flour and beat one minute. Place 2 tsp butter in each of two 9-inch pie plates. Heat in oven 2 minutes until butter is melted. Divide batter between plates. Bake 22 to 25 minutes, until pancakes are puffed and golden brown.

Meanwhile, melt remaining 1 Tbsp butter in large skillet over medium high heat. Add remaining 3 Tbsp sugar and apples. Cook, stirring, until apples begin to brown, 12 to 18 minutes. Add maple syrup and boil 1 minute. Spoon apples into center of pancakes. Serve with additional maple syrup if desired. Serves: 6

Variation for Sauce
2 medium apples, cored and sliced (peel on)
2 Tbsp brown sugar (approximately)
1/2 tsp cinnamon
1/2 tsp vanilla
1 tsp butter

Melt butter in a ten-inch skillet over medium heat. Add apples, cinnamon, sugar and vanilla and stir till apples are soft and sauce forms, about 5 minutes. Adjust for sweetness and set aside.
