APPLE CRISP PANCAKES

Pancakes
1 egg, beaten
3/4 cup milk and chunky applesauce
1 tsp vanilla
2 cups pancake mix

Topping
1/2 cup quick oats
1/4 tsp cinnamon
1/4 cup brown sugar
1/2 cup pancake mix
3 tbsp butter

Spray jelly-roll pan with cooking spray. In a bowl, combine pancake ingredients. Spread mixture in the prepared pan. In a separate bowl, combine topping ingredients and sprinkle over pancake batter. Bake at 375 for 14-16 minutes. Serve with Apple Cinnamon Syrup.
