APPLE CINNAMON PANCAKES

1 tsp baking soda
2 cups flour
2 tsp baking powder
2 tbsp brown sugar
1 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
2 eggs, beaten
1 1/2 cups buttermilk
1/2 cup sour cream
1/4 cup melted butter
1 apple, peeled, cored, and grated

In a large bowl, mix together soda, flour, baking powder, sugar, salt, cinnamon and nutmeg. Mix eggs, buttermilk, sour cream, and butter. Add to flour mixture and stir just until flour is moistened. Stir in grated apple. Place large spoonfuls onto a hot, lightly greased griddle. Cook, turning once, until golden brown. Serves: 4.
