STREUSEL-TOPPED BANANA COFFEECAKE

Topping:
1/4 cup flour
3 tbsp firmly packed brown sugar
4 tsp cinnamon
Dash nutmeg
2 tbsp butter, chilled and cut into 1/2 inch cubes
Cake
2 cups flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup mashed bananas
1/3 cup milk, at room temperature
2 tsp vanilla
1/2 cup butter, room temperature
3/4 cup sugar
2 large eggs
Preheat oven to 350. Butter an 8 inch square pan. Streusel topping: Stir together the first 4 ingredients. Add the butter over the flour mixture and with fingertips, quickly rub the butter into the mixture until it resembles coarse crumbs. Set aside.
Sift flour, baking powder, baking soda, and salt; set aside. Stir together banana, milk, and vanilla. Cream together the butter and sugar; add eggs, one at a time beating well after each addition. In three additions each, alternately beat in the flour mixture and banana mixture just until combined. Pour the batter into the prepared pan and sprinkle top with streusel topping.
Bake for 40 to 45 minutes. Cool cake in the pan on a wire rack. Serve warm. Note: For nutty topping, stir 2-3 tbsp chopped nuts into streusel topping.
