CHOCOLATE CHIP BANANA BREAD

Combine Dry Ingredients:
2 cups flour
1 tsp kosher salt
1/2 tsp baking soda

Whisk Together:
1/2 cup sugar
1/2 cup vegetable oil
2 eggs

Add to Wet Mixture:
1 cup ripe banana, mashed
1/4 cup buttermilk
1/2 tsp vanilla extract

Fold Wet into Dry Mixture; Add:
1/2 cup semisweet chocolate chips
1/2 cup walnuts, chopped

Whisk Together for the Glaze:
1/2 cup confectioners sugar
1 tbsp cream cheese
1 tbsp water
1/2 tsp instant espresso powder
Pinch of salt

Studded with fruit and nuts, this quick bread makes a great holiday gift—if you can part with it.

Preheat oven to 325; coat a loaf pan with nonstick spray. Combine the flour, salt, and baking soda in a large bowl with a whisk, then set aside.

Whisk together in a separate bowl oil, sugar, and eggs to incorporate air. Mash the bananas with a fork or a pastry blender. Add bananas, buttermilk, and vanilla into the egg mixture. Fold wet ingredients into dry ingredients just until combined. Gently fold in chocolate chips and walnuts. Pour batter into prepared loaf pan and bake 60–65 minutes; test with skewer.

While still in the pan, let bread cool for 10 minutes. Whisk glaze ingredients together; remove bread from pan and glaze. Cool completely before slicing—about three hours.

Coffee Glaze Note: Substitute use 1 tbsp of strong brewed coffee in place of the water and espresso powder.
