CHOCOLATE BOURBON MUFFINS

3/4 cup flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar and butter
1 egg
1 (1 oz) square melted semi-sweet chocolate
1 tbsp bourbon
1 tsp vanilla
1/2 cup semi-sweet chocolate chips and chopped nuts

Preheat oven to 400. Prepare pans. In a bowl, combine dry ingredients. In another bowl cream butter and sugar until light and fluffy. Beat in next 4 ingredients.

Add dry mixture to wet mixture just until combined, stir in chips and nuts. Pour batter into a greased muffin pan. Bake for 15-20 minutes. Remove from muffin tins and allow to cool on wire racks. NOTE: These freeze well.
