ASIAN NOODLES

1 lb uncooked linguine
2 tbsp peanut oil
4 garlic cloves, minced
1/2 cup sesame seeds
1/2 cup vegetable oil
1/2 cup sugar
1/3 cup white vinegar
3 tbsp soy sauce
1 tbsp crushed red pepper
4 scallions, chopped

Prepare the linguine according to the package directions; drain, rinse, and drain again. Set aside in a covered dish to keep warm. Heat the peanut oil in a large skillet over medium heat. Add the garlic and sesame seeds and saute’ for 3 to 5 minutes, or until the seeds are golden brown.

Reduce the heat to medium-low; add the vegetable oil, sugar, vinegar, soy sauce, and crushed red pepper and cook for about 2 minutes. Add to the linguine and toss until well combined. Sprinkle with the chopped scallions and serve immediately or cover and chill until ready to use. May be served warm or cold. Serves 4-6
