8 large eggs
1 lb sausage
1 refrigerated roll pie crust
1/2 large onion, grated
3/4 cup mushrooms, chopped
4 whole jalapeno peppers, grated
1 lb sharp cheddar, grated
Form the pie dough into a large deep pie pan, prick the bottom to prevent air pockets. Make an aluminum edge out of tin foil, with 3/4-inch strips to prevent edges from over-browning. Can remove for the last 5 minutes of baking.
Mix sausage, mushrooms, onions, grated peppers, and saute in a skillet on low heat until browned. Set aside. Then, in a large bowl, beat eggs, stir in grated cheese, add in meat mixture slowly stirring until well-blended. Pour into pie crust and bake at 350 until firm in the center, approximately 45 minutes.
