CINNAMON APPLE PANCAKES

2 cups flour
1 tsp baking soda
2 tsp baking powder
1 tbsp brown sugar
1 tsp salt
1 tsp ground cinnamon
2 eggs, beaten
1 1/2 cups buttermilk
1/2 cup sour cream
1/4 cup butter, melted
1 large apple, peeled, cored, and grated

In a large bowl, mix together the flour, baking soda, baking powder, brown sugar, salt, and cinnamon. Mix the eggs, buttermilk, sour cream, and butter in a separate bowl and add to the flour mixture, stirring just until moistened. Fold in the apple.

Using 1/4 cup batter per pancake, pour onto a hot, lightly greased griddle. Cook, turning once, until golden brown. Serves 4
