STRAWBERRY CREAM

3 pints fresh strawberries
2 tbsp kirsch, optional
3 tbsp sugar
1 1/4 cups whipping cream
Mint leaves, to garnish

Set aside 8 to 10 perfect berries for garnish. Clean and hull the rest, then puree in a blender. Blend in the kirsch and sugar. Whip the cream in a chilled bowl, then fold in the pureed strawberry mixture. Spoon into glasses, or into a single glass dessert bowl, and refrigerate until ready to serve. Garnish with mint leaves and whole strawberries. Serves 6-8
